Atlas is a community oriented restaurant and we firmly believe in supporting local farmers. Purchasing goods from local farmers offers multiple benefits, such as, supporting local agriculture, keeping money in the community, and sustaining small farmers and organic farming practices. It also it insures freshness and quality for our restaurant customers. Below we showcase some of the local farmers who contribute to our restaurant each year: Henry Bohlen, Wildlife Lakes FarmsHenry Bohlen at Wildlife Lakes Farms provides Atlas with hormone- free elk. Look for weekend specials with an elk tenderloin or elk New York Strip. If you love elk, you can also find elk jerky and elk pastrami at The Den shop in Iowa City or visit www.wildlifelakes.com. James Nisley, Organic Greens James Nisley at Organic Greens provides The Atlas with mini and micro greens—such as sprouts, snow peas, popcorn shoots and more. You can find Mr. Nisley’s pea shoots on top of our Atlas Mixed Green salad and as a garnish on our Homemade Macaroni and Cheese. Organic Greens products are also available at The New Pioneer Co-op in Iowa City. Janette Ryan-Busch, Fae Ridge Farms Janette Ryan-Busch at Fae Ridge Farms provides Atlas with basil. We like to stock up during the summer, make pesto, and freeze it during the winter. That way, we keep it fresh year round. Fae Ridge Farms are also available at The New Pioneer Co-op in Iowa City.
