Our food comes from the highest quality sources available. Year round nearly 100% of the meat, dairy, eggs, flour, sweet corn and cornmeal that we serve is produced in Minnesota on small family owned farms and cooperatives. Many of our other ingredients are organic or sustainably raised. We also purchase local vegetables when available. All of our signature meats and eggs are from local cage free and non-confinement producers. Chickens are allowed to free roam and given a whole grain diet. Beef is 100% pasture raised, Pork is from Berkshire hogs with a forage and whole grain diet. All meats are 100% naturally raised without hormones or antibiotics. We favor “traditional” foods as the foundation for our recipes: Fresh vegetables & herbs, fresh unsalted butter, full fat milk & cream from pasture based dairies, extra virgin olive oil, organic whole grains and sea salt. We do not use any MSG or high fructose corn syrup. All water served and used for cooking is double filtered.
