Micro-Dairy Opens With Artisanal Cheese Line Swainsboro, Georgia (May 29, 2007) Peaches, peanuts and cheese. In recent years, the art of dairy farming in Georgia has been on the decline even as the global demand for dairy products rises. With a goal of growing the local economy, the folks at Flat Creek Lodge, a hunting and fishing resort and spa in southeast Georgia, have announced the opening of the Flat Creek Lodge Dairy, and they are kicking off with a line of artisanal cheeses. In keeping with the Flat Creek Lodge mission to support the local economy of Emanuel County and provide an eco-friendly environment, owners Steve and Caroline Harless instigated the micro-dairy project to bring the small family dairy that might be found in Europe or New England back to Georgia. Since the process began one-and-a-half years ago, it has been truly a labor of love for these dairy neophytes. The Flat Creek Lodge dining room serves elegant, four-course dinners paired with wines from an extensive list carefully selected from our Sommelier. The menus are based upon the availability of seasonal foods raised or grown on the land. Guests may chose to have their own fish or game from the days hunt prepared for an evening meal. Our culinary team combines regional foods, seafood from the Golden Isles and wild game specialties from Flat Creek Lodge to create a unique dining experience. Cheeses, rich creams and butter from Flat Creeks Dairy, herbs and vegetables from its greenhouses, and freshly baked breads, homemade ice cream and desserts add to the uniqueness of its dining fare. Jams, jellies, relishes are specialty items from Flat Creeks kitchen made from raspberries, blueberries, blackberries, and other fruits from its orchards and farms. Flat Creeks bass, bream, and catfish are tank-raised in a nursery eco-system to supply the dining room. No hormones are used in the raising of fish or wild game, making them as organic as possible. Flat Creek Lodge guests discover a stress-free refined comfort in our distinctive lodging. Each themed lodge room is unique in its design with art and accessories created by local artists. All rooms open onto a long verandah that looks out on the lodge’s main lake. Our 13 lodge rooms and 7 new uniquely appointed cottages can accommodate a maximum of 60 guests. Recent additions include the new fully equipped fitness center and Japanese Mineral Bath House. Maybe a new setting away from the office will help your productivity! Conduct corporate business and conferences in our state-of-the-art, yet comfortably rustic boardroom. Communication capability includes T-1 broadband service, Wi-Fi connection, and video conferencing equipment. End the day with entertaining evenings in the warm conviviality of the dining and gaming lodges. Daytime excursions and golf outings can also be arranged.
